Ingredients

  • 1 cup Bagrry’s oat bran
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips or chopped nuts (optional)

Recipe

  • Preheat your oven to 350°F (175°C). Grease a baking tray or line it with parchment paper.
  • In a mixing bowl, whisk together Bagrry’s oat bran, whole wheat flour, baking soda, and salt until well combined. Set aside.
  • In a separate bowl, cream together the softened butter, brown sugar, and honey (or maple syrup) until light and fluffy.
  • Beat in the egg and vanilla extract until smooth and well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough is formed. If desired, add chocolate chips or chopped nuts.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking tray, spacing them about 2 inches apart.
  • For cookies: Flatten each dough ball slightly with the back of a spoon or your fingers. For bars: Press the dough evenly into the prepared baking tray to create a smooth and compact layer.
  • Bake in the preheated oven for 10-12 minutes for cookies or 15-18 minutes for bars, or until the edges are lightly golden brown.
  • Remove from the oven and allow the cookies or bars to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, enjoy your homemade oat bran cookies and bars as a nutritious snack or dessert! Store any leftovers in an airtight container for up to one wee
